摘要: 谷子是我国重要的杂粮作物,富含蛋白质、脂肪、糖类、膳食纤维以及丰富的人体所必需的微量元素,营养价值极高。从外观品质、蒸煮食味品质、营养品质和加工品质等方面综述了谷子品质性状的研究进展,分析了目前谷子品质研究中存在的问题,并对未来品质研究前景进行了展望。
