白三叶和鸭茅混合青贮饲喂对湖羊屠宰性能及肉品质的影响

Effects of Feeding White Clover and Orchard Grass Mixed Silage on Slaughter Performance and Meat Quality of Hu Sheep

摘要: 为探究矮砧密植苹果园白三叶和鸭茅混播草地饲草混合青贮对湖羊屠宰性能及肉品质的影响,选取100只3月龄湖羊公羔随机等分为2组,对照组以全株玉米青贮为基础配制TMR日粮,试验组以白三叶和鸭茅混合青贮替代50%全株玉米青贮,试验期90 d。试验结束时,每组随机挑选10只接近平均体质量的湖羊屠宰,测定其屠宰性能和肉品质。结果表明,与对照组相比,试验组湖羊宰前活体质量、胴体质量、眼肌面积、胴体净肉率和肉骨比分别显著(P<0.05)提高了32.17%、46.37%、10.91%、4.33%和15.88%,肌肉剪切力、pH24 h和亮度值分别显著(P<0.05)降低了19.31%、3.24%和13.99%,肌肉干物质、粗蛋白和粗脂肪含量分别提高了0.69%、4.64%和2.57%(P>0.05),氨基酸(蛋氨酸除外)和脂肪酸组成及含量无显著差异(P>0.05)。综上,以白三叶和鸭茅混合青贮替代50%全株玉米青贮饲喂湖羊可以改善屠宰性能及肉品质。

Abstract: The purpose of this experiment was to study the effects of mixed silage of white clover and orchard grass on slaughter performance and meat quality of Hu sheep.One hundred three-month-old Hu sheep were randomly divided into two groups. In the control group,TMR diets were prepared based on whole plant corn silage.In the experimental group,50% whole plant corn silage was replaced with white clover and orchard grass mixed silage.The trial period was 90 d.At the end of the test,10 sheep of near average weight were selected for slaughter in each group,and their slaughter performance and meat quality were determined.The results showed that compared with the control group, the live weight, slaughter weight,loin eye area,carcass muscle rate,and meat-bone ratio of Hu sheep in the experimental group we increased(P<0.05) by 32.17%,46.37%,10.91%,4.33% and 15.88%,respectively.Shear force,pH24 h and L∗ of the experimental group decreased (P<0.05) by 19.31%,3.24% and 13.99%,respectively.Dry matter,crude protein,and crude fat contents of the experimental group increased by 0.69%,4.64% and 2.57%,but the differences were not significant(P>0.05).There was no significant difference(P>0.05) in the muscle amino acid(except for methionine) and fatty acid compositions and contents between the two groups.Therefore,the use of white clover and orchard grass mixed silage instead of 50% of the whole plant corn silage to feed Hu sheep can increase slaughter performance and meat quality.
